The Black Crow presents: 

The sweet aroma of honey and caramel fills the air. A well-balanced hint of luscious acidity slowly morphs into the characteristic spiciness of fresh herbs, which tickles the palate gently. The eye is drawn to the unusually large beans: those are lovingly referred to as “elephant coffee beans” by the locals. 

Flying high over the Nicaraguan region of Matagalpa, one cannot help but notice the wide expanse of the coffee plantations owned by the Mierish family. Not only do these people take special care of every coffee cherry and coffee plant that springs up in their land, but they also nurture the environment that surrounds it. Trees are protected: in addition to gifting some cooling shade to the coffee plants and sheltering them from harsh winds, they provide home for the local fauna. Water used for processing coffee beans with the help of the washed method is afterwards cleaned thoroughly and reused. As a thank-you for such love and care, nature rewards the farmers with coffee of a truly extraordinary flavour—and now you can give it a try too.

What's the difference between specialty coffee beans and regular ones?

Specialty coffee includes only the world’s best-rated varieties. Who rates it and how do they do that, you wonder? Well, the rating is in the hands of certified coffee tasters. They evaluate the quality of the coffee they’re presented with based on the scale created by the Specialty Coffee Association (SCA). Four criteria are assessed: origin, the appearance of green beans, the aroma of the prepared brew, and its flavour characteristics. Only coffees that end up scoring somewhere between 80 and 100 points can be rightfully referred to as “specialty”.

How does the washed processing method affect the flavour of coffee?

When using the washed process, beans are first separated from the cherries, then fermented and dried. Coffee processed in this manner acquires a particularly “clean” taste, which makes the dominant notes easier to identify. It’s often fruitier too.

Why are these beans so large? I'm afraid they might damage my bean-to-cup coffee machine.

This arabica coffee belongs to the Maragogype subspecies, which is characterised by beans that are twice as large as the regular arabica ones. They won’t damage your bean-to-cup coffee machine, so feel free to enjoy delicious brews!
